Sweet Potato Black Bean Burgers

These hearty and flavorful sweet potato black bean burgers are a perfect vegetarian alternative to traditional meat burgers. A mixture of mashed sweet potatoes, black beans, and aromatic spices is formed into patties and then baked until crispy on the outside and tender on the inside. Preheat the oven

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the sweet potatoes

Peel and dice the sweet potatoes into 1-inch cubes. Place them in a large pot, cover with water, and bring to a boil. Cook until tender, about 15 minutes. Drain and mash the sweet potatoes in a large bowl.

Prepare the black beans

Drain and rinse the black beans. Add them to the bowl with the mashed sweet potatoes and mash together until well combined.

Prepare the onion and garlic

Finely chop the red onion and mince the garlic cloves. Add them to the sweet potato and black bean mixture.

Add the oats and spices

Add the rolled oats, cumin, smoked paprika, chili powder, salt, and black pepper to the bowl. Mix until well combined.

Form the burger patties

Divide the mixture into 6 equal portions and shape each portion into a burger patty.

Brush the patties with oil

Brush both sides of each patty with olive oil and place them on the prepared baking sheet.

Bake the burgers

Bake the sweet potato black bean burgers in the preheated oven for 25-30 minutes, flipping them halfway through, until they are crispy on the outside and heated through.

Serve the burgers

Remove the burgers from the oven and serve them on your favorite buns with your preferred toppings, such as lettuce, tomato, onion, and avocado.
