Steps

Read instruction and ready to cook

1
Prepare vegetables and chicken

Spiralize the sweet potatoes using a spiralizer or julienne peeler. Cut the red bell pepper into thin strips. Cut the broccoli florets into bite-sized pieces. Cut the chicken breast into 1-inch cubes.

2
Make peanut sauce

In a small bowl, whisk together the peanut butter, soy sauce, minced garlic, grated ginger, lime juice, salt, and black pepper until smooth.

3
Cook chicken

Heat 1 tablespoon of coconut oil in a large wok or skillet over medium-high heat. Add the chicken cubes and stir-fry for 5-7 minutes, or until cooked through. Remove the chicken from the wok and set aside.

4
Cook vegetables

In the same wok, heat the remaining 1 tablespoon of coconut oil. Add the red bell pepper and broccoli florets and stir-fry for 3-4 minutes, or until crisp-tender.

5
Add sweet potatoes and sauce

Add the spiralized sweet potatoes to the wok and stir-fry for 2-3 minutes, or until slightly softened. Pour the peanut sauce over the vegetables and stir to coat evenly.

6
Combine and serve

Return the cooked chicken to the wok and toss with the vegetables and sauce until well combined. Cook for an additional 1-2 minutes to heat through. Serve the Sweet Potato Chicken Stir-fry With Peanut Sauce hot.
