Prepare vegetables and chicken
Spiralize the sweet potatoes using a spiralizer or julienne peeler. Cut the red bell pepper into thin strips. Cut the broccoli florets into bite-sized pieces. Cut the chicken breast into 1-inch cubes.
Make peanut sauce
In a small bowl, whisk together the peanut butter, soy sauce, minced garlic, grated ginger, lime juice, salt, and black pepper until smooth.
Cook chicken
