Prepare the chicken
Cut 1 lb of boneless, skinless chicken breasts into bite-sized pieces. In a shallow dish, mix together 1/4 cup of cornstarch, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Coat the chicken pieces in the cornstarch mixture.
Prepare the batter
In a separate bowl, whisk 2 eggs. Dip the cornstarch-coated chicken pieces in the beaten eggs.
Fry the chicken
In a large skillet or wok, heat 1/2 cup of vegetable oil over medium-high heat. Add the battered chicken pieces and fry for 6-8 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Prepare the vegetables
Cut 1 red bell pepper and 1 green bell pepper into 1-inch pieces.
Prepare the sauce
In a small bowl, whisk together 1/4 cup of rice vinegar, 1/4 cup of ketchup, 2 tablespoons of soy sauce, 1/4 cup of brown sugar, and the remaining 1/4 cup of cornstarch until smooth.

Stir-fry the vegetables

Add 1 cup of pineapple chunks and the prepared sauce to the skillet. Stir well and bring the sauce to a simmer. Cook for 2-3 minutes, or until the sauce has thickened.
Add the chicken
Return the fried chicken to the skillet and toss to coat evenly with the sauce. Cook for an additional 1-2 minutes, or until the chicken is heated through.
