Prepare the marinade

Zest and juice the oranges. Mince the garlic cloves. Remove the leaves from the thyme and rosemary stems and finely chop them. In a small bowl, whisk together the orange zest, orange juice, honey, minced garlic, chopped thyme, chopped rosemary, salt, black pepper, and olive oil.

Prepare the turkey

Remove the giblets and neck from the turkey cavity. Rinse the turkey inside and out with cold water and pat dry with paper towels.

Marinate the turkey

Place the turkey in a large roasting pan. Pour the marinade over the turkey, making sure to coat it evenly, including the cavity. Cover the pan with plastic wrap and refrigerate for at least 4 hours, or overnight, turning the turkey occasionally to ensure even marination.

Preheat the oven

Preheat the oven to 325°F (165°C).

Roast the turkey

Remove the turkey from the refrigerator and discard the plastic wrap. Roast the turkey in the preheated oven for 3 1/2 to 4 hours, or until the internal temperature of the thigh reaches 165°F (74°C), basting the turkey with the pan juices every 30 minutes.

Remove the turkey from the oven and tent it loosely with aluminum foil. Let it rest for 20-30 minutes before carving to allow the juices to redistribute, ensuring a moist and tender result.
