Prepare the chicken

Cut the boneless, skinless chicken breasts into bite-sized pieces, about 1-inch cubes.

Make the teriyaki sauce

In a small bowl, whisk together the soy sauce, mirin, honey, minced garlic cloves, grated ginger, cornstarch, and water until smooth.

Marinate the chicken

Place the chicken pieces in a large bowl and pour half of the teriyaki sauce over them. Toss to coat evenly and let the chicken marinate for 10 minutes.

Prepare the vegetables

Cut the red and yellow bell peppers into thin strips. Cut the broccoli into bite-sized florets. Thinly slice the carrots and green onions.

Cook the chicken

Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the marinated chicken and stir-fry for 5-6 minutes, or until cooked through. Remove the chicken from the wok and set aside.

Stir-fry the vegetables

Add the remaining 1 tablespoon of vegetable oil to the wok. Add the sliced bell peppers, broccoli florets, and sliced carrots. Stir-fry for 3-4 minutes, or until the vegetables are crisp-tender.

Add the sauce and chicken

Pour the remaining teriyaki sauce into the wok and bring it to a simmer. Return the cooked chicken to the wok and toss everything together until well coated and heated through, about 1-2 minutes.

Add the finishing touches

Remove the wok from the heat and stir in the sesame oil and half of the sliced green onions.

Transfer the teriyaki chicken stir-fry to a serving dish and garnish with the remaining sliced green onions and sesame seeds. Serve hot, over steamed rice or noodles.
