Read instructions and get ready to cook
Prepare the pan
Preheat oven to 325°F (165°C). Grease a 9-inch springform pan. Wrap outside of pan with aluminum foil to prevent leaking.
Make the crust
Crush cookies into fine crumbs. Mix with melted butter. Press into bottom of prepared pan. Brush with strong coffee.
Prepare the filling
In a large bowl, beat cream cheese, mascarpone, and sugar until smooth.
Add eggs
Add eggs one at a time, beating well after each addition. Scrape down sides of bowl as needed.
Add flavoring
Mix in coffee and vanilla until just combined. Do not overmix.
Prepare coffee syrup
In a small saucepan, heat coffee and sugar until sugar dissolves. Let cool.
Bake the cheesecake
Pour filling over crust. Place pan in a larger roasting pan. Fill roasting pan with hot water halfway up sides of springform pan. Bake for 55-60 minutes until center is almost set but still slightly jiggly.
Cool the cheesecake
Turn off oven and crack door open. Let cheesecake cool in oven for 1 hour. Remove from water bath and cool completely on a wire rack.
Chill
Refrigerate for at least 4 hours or overnight.
Finish and serve
Before serving, brush top with remaining coffee syrup. Dust generously with cocoa powder. Run a knife around edge of pan before removing sides.
