Read instructions and get ready to cook
Press tofu
Drain tofu and wrap in paper towels. Place a heavy object on top and let sit for 10 minutes to remove excess moisture.
Sauté vegetables
Heat 1 tablespoon olive oil in a skillet over medium heat. Dice onion and mince garlic. Add to skillet and cook until softened, about 5 minutes.
Grate vegetables
Grate carrot and zucchini. Add to the skillet and cook for 2 minutes. Remove from heat and let cool slightly.
Crumble tofu
Crumble pressed tofu into a large bowl.
Add ingredients
To the bowl, add cooked vegetables, breadcrumbs, soy sauce, smoked paprika, salt, and black pepper. Mix well.
Form patties
Form the mixture into 4 patties.
Cook patties
Heat remaining 1 tablespoon olive oil in the skillet over medium heat. Add patties and cook for 4-5 minutes per side, or until golden brown.
