Cook and mash potatoes

Peel and cut the potatoes into 1-inch pieces. Boil in salted water until tender, about 15 minutes. Drain and mash the potatoes until smooth. Set aside to cool slightly.

Drain tuna

Drain the canned tuna and flake it with a fork in a large bowl.

Chop parsley

Finely chop the parsley leaves. Set aside.

Zest and juice lemon

Zest the lemon and set the zest aside. Cut the lemon in half and juice one half, reserving the juice for the aioli.

Mix croquette ingredients

Add the mashed potatoes, eggs, chopped parsley, lemon zest, salt, and black pepper to the bowl with the tuna. Mix well until all ingredients are combined.

Using your hands, shape the tuna mixture into 12 equal-sized patties, about 1/2 inch thick.
