Cook the pasta

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.

Prepare the ingredients

Cut the turkey breast into bite-sized pieces. Peel and finely chop the onion. Peel and mince the garlic cloves. Finely chop the sage leaves. Grate the Parmesan cheese.

Cook the turkey

In a large skillet, heat the olive oil over medium-high heat. Add the turkey pieces and cook for 6-8 minutes, stirring occasionally, until browned and cooked through. Remove the turkey from the skillet and set it aside.

Sauté the aromatics

In the same skillet, add the remaining olive oil and reduce the heat to medium. Add the chopped onion and minced garlic, and sauté for 3-4 minutes until softened and fragrant.

Add the pumpkin puree, heavy cream, chopped sage leaves, ground nutmeg, salt, and black pepper to the skillet with the onion and garlic. Stir to combine and simmer for 5-6 minutes until the sauce thickens slightly.

Add the cooked turkey and pasta to the skillet with the pumpkin sauce. Toss to coat the pasta and turkey evenly, adding some of the reserved pasta water if needed to thin the sauce.
