Read instructions and get ready to cook
Combine dry ingredients
In a saucepan, whisk together sugar, cornstarch, and salt.
Add milk
Gradually whisk in milk until the mixture is smooth.
Cook pudding
Cook the mixture over medium heat, stirring constantly, until it thickens and begins to bubble. Reduce heat to low and cook for 2 more minutes, stirring constantly.
Temper egg yolks
In a bowl, whisk egg yolks. Slowly pour about 1 cup of the hot pudding into the yolks, whisking constantly to temper them.
Combine mixtures
Pour the tempered egg yolk mixture back into the saucepan, stirring constantly.
Cook and add butter
Cook over low heat for 2 more minutes, stirring constantly. Remove from heat and stir in butter until melted.
Add vanilla
Stir in vanilla extract.
Strain pudding
Pour the pudding through a fine-mesh sieve into a clean bowl to remove any lumps.
Cover and chill
Press a piece of plastic wrap directly onto the surface of the pudding to prevent a skin from forming. Refrigerate for at least 2 hours, or until thoroughly chilled.
Serve
Spoon the pudding into individual serving dishes and serve chilled.
