Preheat the oven

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

Prepare the potatoes

Wash potatoes thoroughly. Cut each potato lengthwise into quarters, then each quarter into 2-3 wedges. Place in a large bowl of cold water for 10 minutes. Drain and pat completely dry with paper towels.

Season the wedges

In a large bowl, toss potato wedges with olive oil. Sprinkle with salt, garlic powder, and paprika. Toss until evenly coated.

Bake the wedges

Arrange potato wedges on the prepared baking sheet in a single layer, skin side down. Bake for 25-30 minutes until golden and crispy on the outside and tender inside.

Prepare the cheese

Grate both cheeses if not already shredded. Mix them together in a bowl.

Make the chipotle dressing

Finely chop the chipotle pepper (from canned chipotles in adobo). In a small bowl, mix mayonnaise, sour cream, chopped chipotle, lime juice, salt, garlic powder, and paprika. Stir until well combined. Refrigerate until ready to use.

Add the cheese

When wedges are done, remove from oven. Sprinkle the cheese mixture evenly over the hot wedges. Return to oven for 3-5 minutes until cheese is melted and bubbly.

Drizzle with dressing

Remove wedges from oven. Drizzle with chipotle dressing. Alternatively, serve dressing on the side for dipping.
