Prepare Ingredients
Season beef short ribs with salt and pepper. Finely chop the yellow onion, carrots, and celery stalks. Mince the garlic cloves.
Brown the Ribs
In a large pot, heat olive oil over medium-high heat. Add beef short ribs and sear until browned on all sides. Remove and set aside.
Sauté Vegetables
In the same pot, add chopped onion, carrots, and celery. Sauté until softened. Add minced garlic and cook for another minute.
Add Tomato Paste and Flour
Stir in tomato paste and all-purpose flour. Cook for 2 minutes, stirring constantly.
Deglaze with Whiskey
Pour in whiskey and scrape the bottom of the pot to loosen any browned bits.
Add Broth and Herbs
Add beef broth, fresh thyme, and bay leaves. Bring to a simmer.
Braise the Ribs
Return the ribs to the pot. Cover and simmer on low heat for about 2.5 to 3 hours, or until the meat is tender and falls off the bone.
Serve
Remove thyme and bay leaves. Serve the ribs with the sauce and vegetables.
