Preheat the oven

Preheat the oven to 425°F (220°C).

Prepare the Yorkshire pudding batter

In a large bowl, whisk together the milk, eggs, flour, and salt until smooth. Let the batter rest for 10 minutes.

Bake the profiteroles

Grease a muffin tin. Pour the batter evenly into the muffin cups, filling each about 2/3 full. Bake for 20-25 minutes until puffed and golden.

Prepare the vanilla custard

In a saucepan, heat the heavy cream and scraped vanilla bean seeds over medium heat until simmering. In a separate bowl, whisk the egg yolks and sugar until pale. Gradually pour the hot cream into the egg mixture, whisking constantly. Return the mixture to the saucepan and cook, stirring, until thickened. Strain and chill.

Melt the chocolate

Melt the dark chocolate in a double boiler or in the microwave in 30-second intervals, stirring between each interval, until smooth.

Assemble the profiteroles

Cut the cooled profiteroles in half horizontally. Pipe or spoon the chilled vanilla custard onto the bottom halves. Replace the top halves and drizzle with the melted chocolate. Serve immediately.
