Read instructions and get ready to cook
Prepare Oven and Pan
Preheat the oven to 350°F (175°C). Grease two 9x5-inch loaf pans.
Grate Zucchini
Wash and grate the zucchini using the large holes of a box grater. Set aside.
Zest Oranges
Wash the oranges. Using a zester or fine grater, zest both oranges. Set aside.
Mix Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
Mix Wet Ingredients
In a separate bowl, mix the vegetable oil, eggs, vanilla extract, grated zucchini, and orange zest.
Combine Wet and Dry Mixtures
