Preheat Oven
Preheat your oven to 425°F (220°C). Lightly grease a baking sheet with olive oil.
Prepare the Zucchini
Wash the zucchini and cut off the ends. Slice each zucchini into sticks approximately 3 inches long and 1/2 inch thick.
Beat the Eggs
In a shallow dish, beat 2 whole eggs until well mixed.
Mix Coating Ingredients
