Steps
Read instructions and get ready to cook
Prepare chicken
Cut the chicken breast into small, thin pieces.
Cook chicken
Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook chicken pieces for 4-5 minutes until no longer pink.
Grate cheese
While chicken cooks, grate the cheddar cheese if not already shredded.
Assemble quesadillas
Lay out two tortillas. Divide cooked chicken and cheese evenly between them, covering half of each tortilla.
Fold tortillas
Fold the empty half of each tortilla over the filled half to create a half-moon shape.
Cook quesadillas
Brush the outside of the quesadillas with remaining olive oil. Place in the heated skillet.
Flip and cook
Cook for 2-3 minutes, then carefully flip and cook for another 2-3 minutes until golden brown and cheese is melted.
Serve
Remove from heat, let cool slightly, then cut into wedges and serve immediately.
