Preheat oven
Preheat the oven to 450°F (230°C).
Prepare peppers and eggplant
Wash the red bell peppers and eggplant. Place them whole on a baking sheet lined with parchment paper.
Roast peppers and eggplant
Roast the peppers and eggplant in the preheated oven for 30-40 minutes, turning them occasionally, until the skins are charred and blistered on all sides.
Steam peppers and eggplant
Remove the peppers and eggplant from the oven and place them in a covered bowl or paper bag. Let them steam for 10-15 minutes to loosen the skins.
Peel peppers and eggplant
Once cool enough to handle, peel the skins off the peppers and eggplant. Remove the stems and seeds from the peppers.
Mince garlic
Peel and mince the garlic cloves.
Blend ingredients
In a food processor or blender, combine the peeled peppers, eggplant, minced garlic, olive oil, white vinegar, salt, and black pepper. Blend until smooth and creamy.
Adjust seasoning

Chill and serve
