Toast the Almonds
Spread 1 cup of almonds on a baking sheet and toast in a preheated oven at 350°F (175°C) for 10 minutes or until lightly browned and fragrant.
Prepare the Caramel
In a heavy-bottomed saucepan, combine 1 cup of granulated sugar and 1/4 cup of water. Cook over medium heat, stirring until the sugar has dissolved.
Caramelize the Sugar
Increase the heat to high and bring the mixture to a boil without stirring. Cook until the syrup turns a deep amber color, about 5-7 minutes.
Add Almonds and Butter
Carefully stir in the toasted almonds and 2 tablespoons of butter into the caramelized sugar. Mix quickly to coat the almonds evenly.
Spread and Cool
Immediately pour the mixture onto a greased baking sheet or silicone mat. Spread into an even layer and sprinkle with 1/4 teaspoon of salt. Allow to cool and harden completely.
Break into Pieces
Once cooled, break the almond brittle into pieces using a knife or your hands.
