Season the pork shanks
Preheat the oven to 325°F (165°C). Season the pork shanks generously with salt and black pepper.
Prepare the vegetables
Cut the onion, carrots, and celery into large chunks. Mince the garlic cloves.
Prepare the apples
Core and cut the Granny Smith apples into 1-inch cubes.
Brown the pork shanks
Heat olive oil in a large Dutch oven over medium-high heat. Add the seasoned pork shanks and brown on all sides, about 3-4 minutes per side. Remove the pork shanks and set them aside.
Sauté the vegetables
In the same Dutch oven, add the chopped onion, carrots, celery, and minced garlic. Sauté until the vegetables are softened, about 5 minutes.
Add liquids and seasonings
Pour in the chicken broth and apple cider. Add the dried thyme, dried rosemary, and bay leaves. Stir to combine and bring the mixture to a simmer.
Add apples and pork shanks
Add the cubed apples to the Dutch oven. Return the browned pork shanks to the pot, nestling them into the liquid.
Braise the pork shanks
Cover the Dutch oven with a tight-fitting lid and transfer it to the preheated oven. Braise for 2 1/2 to 3 hours, or until the pork shanks are tender and easily pull away from the bone.
Thicken the sauce
Remove the pork shanks from the Dutch oven and set them aside. In a small bowl, whisk together the cornstarch and 1/4 cup of the braising liquid until smooth. Stir the cornstarch slurry into the remaining braising liquid in the pot and bring it to a simmer over medium heat. Cook, stirring occasionally, until the sauce has thickened slightly, about 5 minutes.
Serve
Return the pork shanks to the Dutch oven, spooning the sauce and apples over the top. Serve the apple-braised pork shanks hot with your favorite side dishes, such as mashed potatoes and steamed vegetables. Enjoy!
