Preheat the Oven
Preheat oven to 350°F (175°C).
Prepare the Baking Pan
Line a 9x13 inch baking pan with parchment paper, leaving overhang on the sides for easy removal.
Prepare the Apples
Peel, core, and dice the apples into small 1/2-inch cubes.
Season the Apples
In a bowl, toss diced apples with 1/4 cup brown sugar and 1 teaspoon cinnamon. Set aside.
Melt the Butter
In a microwave-safe bowl, melt 1/2 cup butter.
Mix Wet Ingredients
In a large bowl, whisk together melted butter, sugar, eggs, and vanilla extract until smooth.
Combine Dry Ingredients
In a separate bowl, whisk together 1 3/4 cups flour, baking powder, salt, and remaining 1 teaspoon cinnamon.
Combine Wet and Dry Mixtures
Add the dry ingredients to the wet ingredients and stir until just combined.
Fold in Apples
Gently fold the seasoned apple pieces into the batter.
Transfer to Baking Pan
Pour the batter into the prepared pan and spread evenly.
Make Crumble Topping
In a small bowl, combine remaining 1/4 cup flour, 1/4 cup brown sugar, oats, and remaining 1/4 cup butter (cut into small pieces). Use your fingers to work the mixture until crumbly.
Add Crumble Topping
Sprinkle the crumble mixture evenly over the batter.
Bake
Bake for 28-32 minutes until a toothpick inserted in the center comes out clean and the top is golden brown.
Cool in Pan
Remove from oven and let cool in the pan for 15 minutes.
Remove from Pan
Use the parchment paper to lift bars out of the pan and transfer to a wire rack to cool completely.
Cut into Squares
Once completely cooled, cut into 16 squares.
Serve
Serve at room temperature or slightly warm.
