Make the batter
In a bowl, whisk together flour, milk, egg, salt, and turmeric until smooth. The batter should be thin, similar to crepe batter. If too thick, add a little more milk.
Strain the batter
Pour batter through a fine-mesh sieve to remove any lumps. This ensures smooth, even flow when making the net pattern.
Rest the batter
Let batter rest for 5-10 minutes.
Prepare the bottle
Transfer batter to a squeeze bottle with a small opening. Alternatively, use a plastic bag with a small hole cut in one corner. Traditional method uses a special cup with multiple holes.
Heat the pan
Heat a non-stick pan over medium heat. Lightly brush with oil.
Make the net pattern
Hold the squeeze bottle about 6 inches above the pan. Squeeze batter in a circular motion to create overlapping lines, forming a net pattern. Work quickly but steadily.
Cook the pancake
Cook for about 1-2 minutes until set and edges begin to curl. Do not flip - these pancakes are cooked only on one side.
Remove and fold
Gently lift the edge with a spatula. Remove from pan. Fold into thirds or quarters while still warm.
Repeat
Lightly oil the pan between pancakes if needed. Continue process with remaining batter.
Serve
Serve warm with curry or as desired. Can be made ahead and reheated briefly before serving.
