Preheat oven
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare pastry
Unfold the puff pastry sheet on the prepared baking sheet. Prick the pastry all over with a fork.
Prepare apples
Peel, core, and thinly slice apples. Place the apple slices in a large bowl and squeeze the juice of 1 lemon over them. Toss to coat.
Arrange apples on pastry
Arrange the apple slices on the pastry in overlapping rows, leaving a 1-inch border around the edges.
Prepare topping
In a small bowl, mix together sugar and cinnamon. Dot the apples with butter and sprinkle the sugar mixture evenly over the top.
Bake tart
Bake for 35-40 minutes, or until the pastry is golden brown and the apples are tender.
Glaze tart
In a small saucepan, heat apricot jam until melted. Brush the warm jam over the apples
Cool and serve
Let the tart cool for 10 minutes before slicing and serving.
