Prepare the chicken

If using raw chicken, season with salt and pepper. Cook in a skillet over medium heat until no longer pink, about 6-8 minutes. Let cool, then shred or dice. If using rotisserie chicken, simply shred or dice.

Prepare the vegetables

Thinly slice or shred cabbage. Peel and grate or julienne carrots. Slice cucumber into thin half-moons. Thinly slice green onions.

Make the dressing

In a small bowl, whisk together sesame oil, soy sauce, vinegar, and honey. Add half the sesame seeds and whisk to combine.

Toast the sesame seeds

In a dry skillet over medium heat, toast remaining sesame seeds until golden, about 2-3 minutes. Stir frequently to prevent burning. Remove from heat and let cool.

Assemble the salad

In a large bowl, combine cabbage, carrots, cucumber, and most of the green onions. Add the chicken. Drizzle with about 3/4 of the dressing. Toss to coat evenly.

Divide salad among four plates or bowls. Drizzle with remaining dressing. Sprinkle with toasted sesame seeds and remaining green onions. Serve immediately.
