Steps

Read instructions and get ready to cook

1
Prepare the ingredients

Trim the woody ends of the asparagus and cut the spears into 1-inch pieces. Chop the onion. Mince the garlic. Clean and slice the leek, white and light green parts only.

2
Sauté the aromatics

In a large pot, melt the unsalted butter over medium heat. Add the chopped onion, minced garlic, and sliced leek. Sauté for 5-7 minutes, or until softened and fragrant.

3
Add the asparagus and broth

Add the asparagus pieces and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer, uncovered, for 15-20 minutes, or until the asparagus is tender.

4
Blend the soup

Using an immersion blender or a regular blender, puree the soup until smooth. If using a regular blender, work in batches and be careful when blending hot liquids.

5
Add the cream and seasonings

Stir in the heavy cream, salt, and black pepper. Simmer for 2-3 minutes, or until heated through.

6
Serve

Ladle the Asparagus Soup into bowls and serve hot.
