Roast the eggplant

Preheat the oven to 450°F (230°C). Pierce 2 large eggplants all over with a fork and place them on a baking sheet. Roast the eggplants for 30-40 minutes, turning occasionally, until the skin is charred and the flesh is soft.

Cool and peel the eggplant

Remove the roasted eggplants from the oven and let them cool for 10-15 minutes, or until comfortable to handle. Cut the eggplants in half lengthwise and scoop out the soft flesh, discarding the skin.

Prepare the garlic and parsley

Mince 3 cloves of garlic and finely chop 2 tablespoons of fresh parsley.

Blend the ingredients

In a food processor or blender, combine the roasted eggplant flesh, 1/4 cup of tahini, the juice of 1 large lemon, minced garlic, 2 tablespoons of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of smoked paprika. Blend until smooth and creamy.

Adjust seasoning

Taste the baba ghanoush and adjust the seasoning as needed, adding more salt, lemon juice, or tahini to taste.

Transfer the baba ghanoush to a serving bowl and garnish with the chopped parsley. Serve the dip chilled or at room temperature with pita bread, crackers, or fresh vegetables for dipping.
