Prepare the shrimp
Rinse the peeled and deveined shrimp under cold water and pat them dry with paper towels. Season the shrimp with salt and black pepper.
Set up the breading station
In three separate shallow dishes, place the all-purpose flour, beaten eggs mixed with coconut milk, and shredded coconut.
Bread the shrimp
Dip each shrimp into the flour, then the egg mixture, and finally coat with the shredded coconut. Place the breaded shrimp on a baking sheet.
Heat the oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).
Fry the shrimp
Working in batches, carefully add the breaded shrimp to the hot oil and fry for 2-3 minutes or until golden brown and cooked through. Remove the shrimp with a slotted spoon and drain on a paper towel-lined plate.
Season and serve
Sprinkle the fried Coconut Shrimp with the remaining salt and serve hot with your favorite dipping sauce.
