Preheat the oven

Preheat oven to 375°F (190°C).

Prepare the pie crust

Place pie crust in a 9-inch pie dish. Prick the bottom with a fork several times. Bake for 10 minutes to partially cook (blind bake). Remove from oven and set aside.

Cook the bacon

Cook bacon in a skillet over medium heat until crispy. Remove to paper towels to drain. When cool, crumble into pieces.

Prepare the onion

Dice the onion finely. Sauté in the bacon fat for 3-4 minutes until translucent. Drain excess fat.

Prepare the cheese

Grate the cheese if not already shredded.

Make the egg mixture

In a bowl, whisk together eggs and cream. Add salt and pepper. Whisk until well combined.

Assemble the quiche

Sprinkle half the bacon, onion, and cheese over the bottom of the par-baked crust. Pour in the egg mixture. Top with remaining bacon, onion, and cheese.

Bake the quiche

Place the quiche on a baking sheet. Bake for 35-40 minutes until the center is set and the top is golden. The quiche is done when a knife inserted in the center comes out clean

Cool slightly

Allow the quiche to cool for 10 minutes before slicing.
