Read instructions and get ready to cook
Preheat the oven
Preheat oven to 375°F (190°C).
Prepare the chicken
Pat chicken thighs dry with paper towels. Season both sides with salt and pepper.
Prepare the plums
Wash plums. Cut in half and remove pits. Cut each half into 2-3 wedges.
Prepare the ginger
Peel the ginger. Grate or finely mince.
Prepare the garlic
Peel the garlic cloves. Mince finely.
Prepare the thyme
If using fresh thyme, remove leaves from stems. Chop if needed.
Sear the chicken
Heat olive oil in a large oven-safe skillet over medium-high heat. Place chicken thighs skin-side down in the hot skillet. Sear for 5 minutes until skin is golden brown. Flip and cook for another 2 minutes. Remove chicken to a plate.
Make the sauce
In the same skillet, add grated ginger and minced garlic. Cook for 1 minute until fragrant. Add red wine, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook for 2 minutes. Stir in honey until dissolved.
Combine ingredients
Add plum wedges to the skillet, stirring to coat with sauce. Return chicken to the skillet, skin-side up. Sprinkle thyme over everything. Spoon some sauce over the chicken.
Bake
Transfer skillet to preheated oven. Bake for 30-35 minutes until chicken is cooked through (internal temperature of 165°F/74°C) and plums are soft.
Finish the dish
Remove from oven. If desired, spoon off excess fat from the surface of the sauce. Taste sauce and adjust seasoning with remaining salt if needed.
Serve
Serve chicken with plums and sauce spooned over the top. Garnish with additional fresh thyme if desired.
