Read instructions and get ready to cook
Preheat oven
Preheat the oven to 375°F (190°C). Grease a baking dish with olive oil.
Clean spinach
Rinse the fresh spinach under cold water and remove any tough stems. Roughly chop the spinach leaves.
Chop onions and garlic
Peel and chop the onions. Peel and mince the garlic cloves.
Sauté onions and garlic
In a large skillet, heat the remaining olive oil over medium heat. Add the chopped onions and minced garlic. Sauté for 5 minutes or until the onions are softened and translucent.
Add spinach
Add the chopped spinach to the skillet and cook, stirring occasionally, for 3-4 minutes or until the spinach is wilted.
Remove from heat
Remove the skillet from the heat and let the spinach mixture cool slightly.
Crumble feta cheese
Crumble the feta cheese into small pieces.
Beat eggs
In a small bowl, beat the eggs until well combined.
Mix ingredients
In a large bowl, combine the cooled spinach mixture, crumbled feta cheese, beaten eggs, paprika, salt, and black pepper. Mix well until all ingredients are evenly distributed.
Transfer to baking dish
Transfer the spinach mixture to the prepared baking dish, spreading it evenly.
Bake
Bake the spinach for 25-30 minutes or until the top is lightly browned and the edges are crispy.
Serve
