Steps
Read instructions and get ready to cook
Cook the macaroni
Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
Prepare the cheese sauce
In a large saucepan, melt the butter over medium heat. Add the flour and whisk constantly for 1-2 minutes to form a roux.
Add milk to the sauce
Gradually pour in the milk, whisking continuously to avoid lumps. Cook, stirring often, until the sauce thickens and coats the back of a spoon, about 5-7 minutes.
Add cheese and seasonings
Remove the saucepan from heat. Stir in the grated cheddar cheese, salt, and black pepper until the cheese is melted and the sauce is smooth.
Prepare the avocado and basil mixture
In a food processor, combine the peeled and pitted avocados, fresh basil leaves, and garlic cloves. Process until smooth and creamy.
Combine macaroni, cheese sauce, and avocado mixture
In a large bowl, mix the cooked macaroni with the cheese sauce and the avocado-basil mixture until well combined.
Bake the mac & cheese
Preheat the oven to 375°F (190°C). Transfer the mac & cheese mixture to a greased 9x13-inch baking dish. Bake for 15-20 minutes, or until heated through and lightly golden on top.
Serve and enjoy
Remove the Basil and Avocado Mac & Cheese from the oven. Let it cool for a few minutes before serving hot.
