Prepare the ribs

Remove the membrane from the back of the pork ribs. Cut the ribs into individual pieces or leave them whole, depending on your preference.

Make the dry rub

In a small bowl, mix together the onion powder, garlic powder, smoked paprika, brown sugar, chili powder, salt, and black pepper.

Apply the dry rub

Generously coat the pork ribs with the prepared dry rub, massaging it into the meat on both sides.

Preheat the grill

Preheat your grill to 250°F (120°C) for indirect cooking.

Grill the ribs

Place the rubbed ribs on the grill grates away from direct heat. Close the grill lid and cook the ribs for 2 1/2 to 3 hours, or until the meat is tender and pulls away from the bones easily.

Baste with BBQ sauce

During the last 30 minutes of cooking, brush the ribs generously with BBQ sauce on both sides, turning them every 10 minutes to ensure even caramelization.
