Preheat Oven

Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish with cooking spray or butter.

Prepare the vegetables

Finely chop the onion and mince the garlic cloves.

Cook the ground beef

In a large skillet, cook the ground beef over medium heat until browned and no longer pink, about 10 minutes. Drain any excess fat.

Add the vegetables and seasonings

Add the chopped onion and minced garlic to the skillet. Cook until the onion is softened, about 5 minutes. Stir in the chili powder, cumin, oregano, salt, and black pepper. Cook for 1 minute, stirring constantly.

Warm the tortillas

Wrap the corn tortillas in damp paper towels and microwave for 30 seconds to 1 minute, or until soft and pliable.

Assemble the enchiladas

Spoon about 1/4 cup of the beef mixture onto the center of each tortilla. Roll up the tortillas and place them seam-side down in the prepared baking dish. Pour the tomato sauce evenly over the enchiladas.

Sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the top of the enchiladas. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
