Read instructions and get ready to cook
Season the beef
Cut the beef into 1-inch cubes and season with salt and black pepper.
Coat the beef with flour
Toss the seasoned beef cubes with all-purpose flour until evenly coated.
Brown the beef
In a large, heavy-bottomed pot or Dutch oven, brown the floured beef in batches over medium-high heat. Remove the browned beef and set it aside.
Prepare the vegetables
Roughly chop the onion, carrots, and celery. Mince the garlic cloves.
Sauté the vegetables
In the same pot, sauté the chopped onion, carrots, celery, and minced garlic until softened, about 5 minutes.
Add beef and liquids
Return the browned beef to the pot. Stir in the beef stock, tomato paste, and Worcestershire sauce.
Add herbs and simmer
Add the thyme sprigs and bay leaves to the pot. Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 2 hours or until the beef is tender.
Preheat the oven
Preheat the oven to 400°F (200°C).
Transfer filling to a pie dish
Remove the thyme sprigs and bay leaves from the stew. Transfer the filling to a 9-inch pie dish.
Prepare the pastry
Roll out the puff pastry sheet on a lightly floured surface to fit the top of the pie dish. Place the pastry over the filling and trim the edges. Cut a few slits in the top to allow steam to escape.
Egg wash the pastry
Beat the egg in a small bowl. Brush the beaten egg over the pastry to give it a golden shine.
Bake the pie
Bake the pie in the preheated oven for 25-30 minutes, or until the pastry is golden brown and puffed.
Let the pie cool
Remove the pie from the oven and let it cool for 5-10 minutes before serving.
