Slice the beef

Slice the flank steak against the grain into thin strips, about 1/4-inch thick.

Prepare the vegetables

Cut the bell peppers into 1-inch squares. Thinly slice the onion. Mince the garlic cloves and ginger.

In a small bowl, whisk together the soy sauce, cornstarch, brown sugar, rice vinegar, and sesame oil until the cornstarch is dissolved. Set aside.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the sliced beef and cook, stirring occasionally, until browned and cooked through, about 3-4 minutes. Remove the beef from the skillet and set aside.
