Prepare the bell peppers
Wash the orange bell peppers and pat them dry. Cut the tops off the peppers and remove the seeds and membranes. Using a sharp knife, carefully carve jack-o'-lantern faces into the sides of the peppers.
Cook the ground turkey
In a large skillet, heat the olive oil over medium heat. Add the ground turkey and cook, breaking it up with a wooden spoon, until browned and cooked through, about 8-10 minutes. Remove the turkey from the skillet and set aside.
Prepare the vegetables
Finely chop the onion and mince the garlic cloves. In the same skillet, sauté the onion and garlic until softened, about 5 minutes.
Mix the filling
In a large bowl, combine the cooked ground turkey, sautéed onion and garlic, cooked rice, diced tomatoes with their juices, paprika, cumin, salt, and black pepper. Mix well.
Stuff the bell peppers
Preheat the oven to 375°F (190°C). Spoon the turkey and rice mixture into the carved bell peppers, filling them to the top.
Bake the stuffed peppers
Place the stuffed bell pepper pumpkins in a baking dish and cover with foil. Bake for 30-35 minutes, or until the peppers are tender and the filling is heated through.
Serve
Remove the bell pepper pumpkins from the oven and let them cool for a few minutes. Serve warm as a festive and healthy Halloween appetizer or main course. Enjoy the delightful combination of flavors and textures in these charming stuffed peppers!
