Prepare the bell peppers

Wash the orange bell peppers and pat them dry. Cut the tops off the peppers and remove the seeds and membranes. Using a sharp knife, carefully carve jack-o'-lantern faces into the sides of the peppers.

In a large skillet, heat the olive oil over medium heat. Add the ground turkey and cook, breaking it up with a wooden spoon, until browned and cooked through, about 8-10 minutes. Remove the turkey from the skillet and set aside.
