Heat milk and cream

In a medium saucepan, combine the milk, heavy cream, vanilla bean, and cinnamon stick. Heat the mixture over medium heat until it reaches a simmer, stirring occasionally.

Whisk eggs and sugar

In a large bowl, whisk together the eggs and sugar until smooth and well combined.

Temper the egg mixture

Gradually pour the hot milk mixture into the egg mixture, whisking constantly to prevent the eggs from scrambling.

Cook the eggnog

Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon, about 5-7 minutes. Do not let the mixture boil.
