Read instructions and get ready to cook
Prepare the Tofu
Drain and press tofu to remove excess water. Cut into 1-inch cubes.
Prepare the Broccoli
Wash broccoli and cut into florets.
Prepare the Onion
Peel and dice the onion.
Prepare the Aromatics
Peel and mince garlic and ginger.
Prepare the Coriander
Wash coriander and roughly chop, separating stems and leaves.
Cook the Tofu
Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add tofu cubes and cook until golden on all sides, about 5-7 minutes. Remove and set aside.
Sauté the Onion
In the same pan, add remaining olive oil and sauté diced onion until translucent, about 3-4 minutes.
Add Aromatics
Add minced garlic, ginger, and chopped coriander stems to the onions. Sauté for 1 minute until fragrant.
Add Spices
Stir in curry powder, turmeric, cumin, salt, black pepper, and red pepper flakes. Cook for 30 seconds to toast the spices.
Add Liquids
Pour in coconut milk and vegetable broth. Stir to combine and bring to a simmer.
Add Broccoli
Add broccoli florets to the simmering sauce. Cover and cook for 4-5 minutes until broccoli is tender-crisp.
Return Tofu to Pan
Add the cooked tofu back to the pan and gently stir to coat with the sauce. Simmer for 2-3 minutes to allow flavors to meld.
Add Lime Juice
Cut lime in half and squeeze juice into the curry. Stir to combine.
Garnish
Remove from heat and garnish with fresh coriander leaves.
Serve
Serve hot over rice or with flatbread.
