Preheat Oven
Preheat the oven to 400°F (200°C).
Prepare Brussels sprouts
Trim the ends of the Brussels sprouts and remove any discolored outer leaves. Cut the sprouts in half lengthwise.
Cook bacon
In a large skillet, cook the bacon over medium heat until crisp, about 8-10 minutes. Remove the bacon from the skillet and set aside on a paper towel-lined plate to drain. Once cooled, chop the bacon into small pieces.
Prepare shallot
Peel and thinly slice the shallot.
Sauté shallot
In the same skillet used for the bacon, heat the olive oil over medium heat. Add the sliced shallot and sauté until softened and lightly caramelized, about 5-7 minutes.
Combine ingredients
In a large bowl, combine the halved Brussels sprouts, sautéed shallot, chopped bacon, salt, and black pepper. Toss to coat evenly.
Transfer to baking sheet
Transfer the Brussels sprout mixture to a baking sheet, spreading it out in an even layer.
Roast
Roast the Brussels sprouts in the preheated oven for 20-25 minutes, or until they are tender and lightly caramelized, stirring once halfway through cooking.
Serve
Remove the baking sheet from the oven and transfer the Brussels sprouts with bacon to a serving dish. Serve hot as a side dish.
