Cook Buckwheat
Rinse the buckwheat groats under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add the buckwheat groats, reduce heat to low, cover, and simmer for 10 minutes or until tender. Drain any excess water.
Prep Vegetables
Finely dice the onion. Mince the garlic cloves. Grate the carrot. Finely chop the fresh parsley.
Sauté Vegetables
In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion, minced garlic, and grated carrot. Cook until the onion is translucent and the carrot is soft, about 5 minutes. Stir in the chopped parsley.
Combine and Form Patties
In a large bowl, combine the cooked buckwheat, sautéed vegetables, salt, black pepper, and ground cumin. Mix well. Form the mixture into 4 equal-sized patties.
Cook Burgers
Heat a thin layer of olive oil in a large skillet over medium-high heat. Add the patties and cook for about 4-5 minutes on each side or until golden brown and crispy.
