Prepare turkey legs

Preheat oven to 325°F (165°C). Pat turkey legs dry with paper towels. Arrange in a large baking dish.

Make herb butter

Mince garlic. Finely chop rosemary and thyme. In a small bowl, mix softened butter, garlic, rosemary, thyme, paprika, salt, pepper.

Season turkey legs

Rub herb butter all over turkey legs, getting under the skin where possible.

Roast turkey legs

Cover baking dish with foil. Roast for 1 hour. Remove foil, baste with pan juices. Continue roasting, basting every 15 min, until legs are very tender and skin is crisp, 30-45 min more.

Rest and serve

Transfer turkey legs to a platter. Tent with foil, let rest 10 min before serving.
