Read instructions and get ready to cook
Soak the Cashews
Place cashews in a bowl and cover with water. Soak for at least 4 hours or overnight in the refrigerator.
Drain and Rinse
Drain the soaked cashews and rinse thoroughly under cold water.
Blend Cashews
Place drained cashews in a high-speed blender with fresh water. Blend on high until completely smooth and creamy, about 2-3 minutes.
Transfer to Container
Pour the mixture into a clean glass container. Cover with a clean cloth or paper towel secured with a rubber band (to allow air flow while keeping out dust).
Ferment
Place the container in a warm spot (about 70-75°F) away from direct sunlight. Let ferment for 8-24 hours, depending on desired tanginess. The longer it ferments, the tangier it becomes.
Check for Fermentation
After 8 hours, taste the yogurt. It should have a slightly tangy flavor. If you prefer it tangier, continue fermenting, checking every few hours.
Add Flavorings
Once desired tanginess is reached, stir in maple syrup, lemon juice, vanilla extract, and salt.
Refrigerate
Transfer to an airtight container and refrigerate for at least 2 hours to chill and set.
Stir Before Serving
Stir the yogurt before serving as it may separate slightly during refrigeration.
Serve
Serve plain or with your favorite toppings such as fresh fruit, granola, or a drizzle of honey.
