Roast the butternut squash

Preheat the oven to 400°F (200°C). Cut the butternut squash in half lengthwise and remove the seeds. Brush the cut sides with 1 tablespoon of olive oil and place the halves cut-side down on a baking sheet. Roast for 40-50 minutes, or until the squash is tender when pierced with a fork. Let cool slightly, then scoop out the flesh and mash it until smooth.

Cook the pasta shells

Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook according to the package instructions until al dente. Drain the shells and set them aside.

Prepare the filling

In a large bowl, mix together the mashed butternut squash, ricotta cheese, 1/2 cup of grated Parmesan cheese, minced garlic cloves, dried sage, nutmeg, salt, and black pepper until well combined.

Assemble the pasta bake

Preheat the oven to 375°F (190°C). Spread 1 cup of tomato sauce in the bottom of a 9x13-inch baking dish. Fill each cooked pasta shell with about 2 tablespoons of the butternut squash mixture and arrange them in the baking dish. Pour the remaining tomato sauce over the stuffed shells and sprinkle with the shredded mozzarella cheese and remaining 1/2 cup of grated Parmesan cheese.

Bake the pasta

Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the edges are lightly browned.
