Toast the almonds

Prepare the apples
Wash and dry the apples thoroughly. Core the apples and cut into 1/2-inch thick slices.
Prevent browning
Place apple slices in a large bowl. Drizzle with lemon juice and toss gently to coat all surfaces. This prevents the apples from browning.
Make cinnamon sugar
In a small bowl, mix remaining brown sugar with cinnamon.
Season the apples
Sprinkle the cinnamon-sugar mixture over the apple slices. Toss gently to coat evenly.
Make the caramel sauce
In a medium saucepan with a heavy bottom, heat granulated sugar over medium heat. Do not stir; instead, swirl the pan occasionally to ensure even melting.
Watch the sugar
Allow sugar to melt completely and turn amber in colour. This will take about 8-10 minutes; watch carefully to prevent burning.
Add butter to caramel
Once sugar is completely melted and amber-colored, carefully add butter. Whisk vigorously until butter is melted and incorporated. The mixture will bubble up, so be cautious.
Add cream to caramel
Remove from heat and slowly pour in heavy cream while whisking constantly. The mixture will bubble vigorously again. Continue whisking until smooth
Add flavor to caramel
Stir in vanilla extract and salt. Allow caramel to cool slightly for 5 minutes.
Arrange apple slices
Divide the apple slices among 4 serving plates or bowls. Arrange in a circular pattern or fan shape.
Drizzle with caramel
While still warm, drizzle the caramel sauce over the apple slices. Reserve some caramel for the final drizzle.
Add chocolate chips
