In a large bowl, mix 1 cup of flour, yeast, and granulated sugar. Heat the milk and butter until warm (110°F/43°C), and add to the flour mixture. Mix until well combined, then cover and let rest for 30 minutes.

Add remaining dough ingredients

Add the eggs, salt, and remaining 1 1/2 cups of flour to the dough mixture. Mix until a soft dough forms, then knead for 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.

Prepare the filling

Peel, core, and chop the apples into small pieces. In a bowl, mix the chopped apples, brown sugar, cinnamon, cardamom, ginger, and cloves until well combined.

Shape the kolaches

Punch down the risen dough and divide it into 12 equal pieces. Roll each piece into a ball, then flatten it into a disc. Place a spoonful of the chai-spiced apple filling in the center of each disc, then fold the edges up and pinch to seal, creating a well in the center.
