Prepare the hot dogs

Cut the cheddar cheese into 8 long, thin sticks. Slice the jalapeño peppers in half lengthwise and remove the seeds. Dice the jalapeño peppers. Make a deep slit lengthwise in each hot dog, being careful not to cut all the way through. Stuff each hot dog with a cheese stick and some diced jalapeños.

Make the batter

In a large bowl, whisk together the all-purpose flour, cornmeal, sugar, baking powder, and salt. In a separate bowl, beat the eggs and milk until well combined. Pour the wet ingredients into the dry ingredients and mix until a smooth batter forms.

Heat the oil

In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Dip the hot dogs

Insert a wooden skewer into each stuffed hot dog. Dip the hot dogs into the batter, turning to coat evenly. Allow any excess batter to drip off.

Fry the corn dogs

Carefully place the battered hot dogs into the hot oil and fry for 3-4 minutes, or until golden brown and crispy. Work in batches to avoid overcrowding the pot. Remove the corn dogs from the oil using tongs and place them on a paper towel-lined plate to drain excess oil.
