Read instructions and get ready to cook
Prepare ingredients
Cut chicken into bite-sized pieces. Chop onion. Mince garlic. Cut potatoes into 1-inch chunks. Trim asparagus, cut into 2-inch pieces.
Brown chicken
In a large pot, heat oil over medium-high heat. Add chicken, cook until browned, 5-6 min. Transfer to a plate.
Cook onion and garlic
In same pot, add onion, garlic. Cook until softened, 3-4 min.
Add potatoes and broth
Stir in potatoes, broth, juice of 1 lemon, thyme, 1/2 tsp salt, 1/4 tsp pepper. Bring to a boil, then reduce heat. Simmer until potatoes are tender, 15-20 min.
Add chicken and asparagus
Return chicken to pot. Add asparagus. Simmer until chicken is cooked through and asparagus is crisp-tender, 5-7 min.
Season and serve
Taste, adjust seasoning with salt and pepper. Serve hot.
