Read instructions and get ready to cook
Cook chicken
In a large pot, boil chicken breasts until cooked through, about 15-20 minutes.
Shred chicken
Remove chicken from pot and shred using two forks.
Season chicken
In a bowl, mix shredded chicken with cumin, chili powder, garlic powder, onion powder, salt, and pepper.
Prepare cheese
Grate the cheddar cheese if not already shredded.
Warm tortillas
Wrap corn tortillas in a damp paper towel and microwave for 30 seconds to soften.
Assemble taquitos
Place about 2 tablespoons of chicken mixture and 1 tablespoon of cheese on each tortilla.
Roll taquitos
Tightly roll up the tortillas and secure with toothpicks if needed.
Heat oil
In a large skillet, heat vegetable oil over medium-high heat.
Fry taquitos
