Prepare ingredients

Preheat oven to 375°F (190°C). Cut chicken into bite-sized pieces. Slice mushrooms. Finely chop onion. Mince garlic.

Cook chicken

In a large skillet, melt 2 tbsp butter over medium-high heat. Add chicken, cook until browned, 6-8 min. Transfer to a 9x13 inch baking dish.

Make mushroom mixture

In same skillet, melt 2 tbsp butter. Add mushrooms, onion, garlic, 1/2 tsp salt, 1/4 tsp pepper. Cook until mushrooms release liquid and onion softens, 8-10 min.

Make sauce

Stir flour into mushroom mixture, cook 1 min. Gradually stir in broth and cream. Simmer until thickened, 3-5 min. Stir in thyme, 1/2 tsp salt, 1/4 tsp pepper.

Assemble casserole

Pour mushroom sauce over chicken. Sprinkle with cheese, then breadcrumbs.

Bake and serve

Bake until bubbly and top is golden brown, 25-30 min. Let stand 5 min before serving.
