Cook the chicken
Preheat the oven to 375°F (190°C). Place the chicken breasts in a baking dish and season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Bake for 25-30 minutes, or until cooked through. Remove from the oven and let cool slightly. Cut the chicken into bite-sized pieces.
Cook the egg noodles
Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain the noodles and set aside.
Prepare the vegetables
Slice the mushrooms. Finely chop the onion. Mince the garlic cloves.
Make the mushroom sauce
In a large skillet, melt the butter over medium heat. Add the chopped onion and minced garlic. Sauté until softened, about 5 minutes. Add the sliced mushrooms and cook until they release their moisture and become tender, about 5-7 minutes.
Add flour and liquids
Sprinkle the all-purpose flour over the mushroom mixture. Stir and cook for 1-2 minutes. Gradually pour in the chicken broth and heavy cream, stirring constantly to avoid lumps. Simmer the sauce until thickened, about 5 minutes.
Add seasonings and cheese
Season the sauce with the remaining 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and dried thyme. Stir in 1/2 cup of the shredded cheddar cheese until melted.
Assemble the casserole
In a large baking dish, combine the cooked egg noodles, chicken pieces, and mushroom sauce. Stir gently to distribute evenly.
Add topping and bake
In a small bowl, mix the remaining 1/2 cup of shredded cheddar cheese and breadcrumbs. Sprinkle the mixture over the top of the casserole. Bake for 20-25 minutes, or until the top is golden brown and the casserole is bubbly.
