Read instructions and get ready to cook
Prepare ingredients
Cut chicken into bite-sized pieces. Chop onion, carrots, and celery. Mince garlic.
Brown chicken
In a large pot, heat oil over medium-high heat. Add chicken, cook until browned, 5-6 min. Transfer to a plate.
Sauté vegetables
In same pot, add onion, carrots, celery. Cook until softened, 5 min. Add garlic, cook 1 min.
Add tomatoes and broth
Stir in diced tomatoes, broth, thyme, oregano, salt, pepper. Bring to a boil.
Simmer stew
Return chicken to pot. Reduce heat, simmer uncovered until chicken is cooked through, 15-20 min.
Add spinach and serve
Stir in spinach until wilted, 2-3 min. Taste, adjust seasoning. Serve hot.
